Description

This Street Corn Chicken Rice Bowl combines the flavors of Mexican street corn with grilled chicken and rice for a delicious and satisfying meal.

2 cups cooked rice
1 lb chicken breast, grilled and sliced
2 cups corn kernels, grilled
1/2 cup mayonnaise
1/4 cup sour cream
1/4 cup chopped cilantro
1/2 teaspoon chili powder
1/2 teaspoon cumin
1/4 teaspoon garlic powder
1/4 teaspoon onion powder
1/4 teaspoon salt
1/4 teaspoon pepper
1 lime, juiced
1/2 cup crumbled cotija cheese
1/4 cup chopped green onions


Instructions

In a small bowl, mix together mayonnaise, sour cream, cilantro, chili powder, cumin, garlic powder, onion powder, salt, pepper, and lime juice to make the sauce.
In a serving bowl, place a scoop of cooked rice at the bottom.
Top the rice with grilled chicken slices and grilled corn kernels.
Drizzle the sauce over the chicken and corn.
Sprinkle with crumbled cotija cheese and chopped green onions.
Serve the street corn chicken rice bowl immediately.
