2 boneless, skinless chicken breasts
1 cup corn kernels
1 cup cooked white rice
1/2 cup mayonnaise
1/4 cup sour cream
1/4 cup chopped cilantro
1/2 teaspoon chili powder
1/2 teaspoon garlic powder
1 lime, juiced
1/4 cup grated cotija cheese
Salt and pepper to taste
2 tablespoons olive oil


Instructions

Season the chicken breasts with salt, pepper, and olive oil. Grill or pan-sear the chicken until fully cooked. Let it rest before slicing into strips.
In a bowl, mix together the mayonnaise, sour cream, lime juice, chili powder, garlic powder, and chopped cilantro. Season with salt and pepper.
In a separate bowl, combine the cooked rice and corn kernels.
Divide the rice and corn mixture into serving bowls. Top with sliced chicken strips.
