Ingredients
1 lb chicken breast, boneless and skinless
1 cup corn kernels
1 cup cooked white rice
1/2 cup shredded cheddar cheese
1/4 cup mayonnaise
1/4 cup sour cream
2 tablespoons lime juice
1 teaspoon chili powder
1/2 teaspoon garlic powder
1/4 cup chopped fresh cilantro
Salt and pepper to taste
Lime wedges for garnish
Cilantro leaves for garnish
Instructions
Season the chicken breast with salt, pepper, and chili powder. Grill or pan-sear the chicken until fully cooked. Let it rest for 5 minutes before slicing.
In a mixing bowl, combine corn, cooked white rice, shredded cheddar cheese, mayonnaise, sour cream, lime juice, chili powder, garlic powder, chopped cilantro, salt, and pepper. Mix well.
Divide the rice mixture into serving bowls. Top each bowl with sliced grilled chicken.
Garnish with lime wedges and cilantro leaves.
