Ingredients

  • 4 large flour tortillas
  • 1 bell pepper, sliced
  • 1 onion, sliced
  • 1 tbsp olive oil
  • Salt and pepper to taste
  • Sour cream for serving (optional)
  • Salsa for serving (optional)

Instructions

  1. Preheat the Blackstone griddle over medium-high heat.
  2. In a bowl, toss the sliced steak with olive oil, salt, and pepper.
  3. Add the steak to the griddle and cook for 3-4 minutes until browned.
  4. Add the sliced bell pepper and onion; cook until softened, about 2-3 minutes.
  5. Remove the steak and vegetables from the griddle and set aside.
  6. Place a tortilla on the griddle, sprinkle half with cheese, then add a portion of the steak and vegetables, and fold the tortilla.
  7. Cook for 2-3 minutes on each side until golden brown and the cheese is melted.
  8. Repeat with remaining tortillas.
  9. Slice and serve with sour cream and salsa, if desired.
