Delicious and cheesy steak quesadillas cooked to perfection on a Blackstone griddle.
Ingredients

- 1 lb steak, sliced thin
- 1 cup shredded cheese (cheddar or Mexican blend)
- 4 large flour tortillas
- 1 bell pepper, sliced
- 1 onion, sliced
- 1 tbsp olive oil
- Salt and pepper to taste
- Sour cream for serving (optional)
- Salsa for serving (optional)
Instructions
- Preheat the Blackstone griddle over medium-high heat.
- In a bowl, toss the sliced steak with olive oil, salt, and pepper.
- Add the steak to the griddle and cook for 3-4 minutes until browned.
- Add the sliced bell pepper and onion; cook until softened, about 2-3 minutes.
- Remove the steak and vegetables from the griddle and set aside.
- Place a tortilla on the griddle, sprinkle half with cheese, then add a portion of the steak and vegetables, and fold the tortilla.
- Cook for 2-3 minutes on each side until golden brown and the cheese is melted.
- Repeat with remaining tortillas.
- Slice and serve with sour cream and salsa, if desired.
Notes
- For extra flavor, marinate the steak in your favorite spices before cooking.
- You can customize the filling with additional ingredients like jalapeños or mushrooms.
