These Spinach and Feta Quesadillas are a delicious and easy-to-make meal that combines the flavors of fresh spinach and tangy feta cheese in a crispy tortilla. Perfect for a quick lunch or dinner!
Ingredients
2 cups fresh spinach, chopped
1 cup crumbled feta cheese
4 large flour tortillas
1 tablespoon olive oil
1/2 teaspoon garlic powder
Salt and pepper to taste
Instructions
In a mixing bowl, combine chopped spinach and crumbled feta cheese. Season with garlic powder, salt, and pepper.
Place a tortilla on a flat surface. Spread an even layer of the spinach and feta mixture on half of the tortilla. Fold the other half over to create a half-moon shape.
Heat olive oil in a skillet over medium heat. Place the quesadilla in the skillet and cook for 2-3 minutes on each side or until golden brown and crispy.
Remove from the skillet and let it cool for a minute before cutting into wedges.
Repeat with the remaining tortillas and filling.
Serve warm and enjoy!
