Description
A creamy and spicy soup inspired by jalapeño poppers, served with crispy grilled cheese dippers for a comforting meal.

- 1 tablespoon olive oil
- 1 onion, diced
- 3 cloves garlic, minced
- 2 cups chicken or vegetable broth
- 2 cups cream cheese, softened
- 1 cup shredded cheddar cheese
- 1 cup diced jalapeños (fresh or pickled)
- 1 tablespoon lime juice
- 1 teaspoon smoked paprika
- Salt and pepper to taste
- 4 slices of bread
- 4 slices of cheddar cheese for grilling
Instructions
- Heat olive oil in a large pot over medium heat. Add diced onion and sauté until translucent.
- Add minced garlic and sauté for another minute until fragrant.
- Pour in the broth and bring to a simmer.
- Stir in the cream cheese until melted and smooth.
- Add shredded cheddar cheese, diced jalapeños, lime juice, smoked paprika, salt, and pepper. Stir until well combined and heated through.
- Meanwhile, heat a skillet over medium heat. Assemble grilled cheese sandwiches with bread and cheddar cheese, then grill until golden brown on both sides.
- Serve the soup in bowls with grilled cheese dippers on the side.
Notes
- For a milder soup, remove the seeds from jalapeños.
- Customize the cheese blend to include your favorites.
- Soup can be made ahead and reheated.
