  • 2 cups chicken or vegetable broth
  • 2 cups cream cheese, softened
  • 1 cup shredded cheddar cheese
  • 1 cup diced jalapeños (fresh or pickled)
  • 1 tablespoon lime juice
  • 1 teaspoon smoked paprika
  • Salt and pepper to taste
  • 4 slices of bread
  • 4 slices of cheddar cheese for grilling

Instructions

  1. Heat olive oil in a large pot over medium heat. Add diced onion and sauté until translucent.
  2. Add minced garlic and sauté for another minute until fragrant.
  3. Pour in the broth and bring to a simmer.
  4. Stir in the cream cheese until melted and smooth.
  5. Add shredded cheddar cheese, diced jalapeños, lime juice, smoked paprika, salt, and pepper. Stir until well combined and heated through.
  6. Meanwhile, heat a skillet over medium heat. Assemble grilled cheese sandwiches with bread and cheddar cheese, then grill until golden brown on both sides.
  7. Serve the soup in bowls with grilled cheese dippers on the side.

Notes

  • For a milder soup, remove the seeds from jalapeños.
