This Spiced Coconut Basil Chicken with Rice is a flavorful and aromatic dish that combines the richness of coconut milk with the freshness of basil. The spices add a depth of flavor to the grilled chicken, making it a perfect meal for any occasion.
Ingredients
4 boneless, skinless chicken breasts
1 cup coconut milk
1/4 cup fresh basil leaves, chopped
2 tablespoons soy sauce
2 cloves garlic, minced
1 teaspoon ground cumin
1/2 teaspoon turmeric
1/2 teaspoon paprika
Salt and pepper to taste
2 cups cooked rice
Instructions
In a bowl, mix together coconut milk, basil, soy sauce, garlic, cumin, turmeric, paprika, salt, and pepper.
Add chicken breasts to a resealable plastic bag and pour the marinade over them. Seal the bag and refrigerate for at least 30 minutes.
Preheat grill to medium-high heat.
Remove chicken from the marinade and grill for about 6-7 minutes per side or until cooked through.
While the chicken is grilling, heat the remaining marinade in a saucepan until it thickens slightly.
Serve the grilled chicken over cooked rice and drizzle with the thickened marinade.
Garnish with additional basil leaves if desired.
