- 2 cups fresh peaches, peeled and sliced
- 1 cup all-purpose flour
- 1 cup granulated sugar
- 1/2 cup unsalted butter, softened
- 2 large eggs
- 1/2 cup milk
- 1 tsp vanilla extract
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/4 tsp salt
- 1/2 cup brown sugar
- 1/2 cup rolled oats
- 1/2 tsp cinnamon
- 1/4 cup chopped nuts (optional)
Instructions
- Preheat the oven to 350°F (175°C) and grease a 9-inch round cake pan.
- In a mixing bowl, cream together the softened butter and granulated sugar until light and fluffy.
- Add the eggs one at a time, mixing well after each addition, then stir in the milk and vanilla extract.
- In another bowl, whisk together the flour, baking powder, baking soda, and salt. Gradually add the dry ingredients to the wet mixture, mixing until just combined.
- Fold in the sliced peaches and pour the batter into the prepared cake pan.
- In a separate bowl, mix the brown sugar, oats, cinnamon, and chopped nuts (if using) for the crumb topping. Sprinkle it evenly over the cake batter.
- Bake for 40-45 minutes or until a toothpick inserted in the center comes out clean.
- Allow to cool for 10 minutes in the pan before transferring to a wire rack to cool completely.
Notes
- This cake is best served warm with a scoop of vanilla ice cream.
- Leftovers can be stored in an airtight container at room temperature for up to 3 days.
