Indulge in the flavors of a classic campfire treat with this decadent S’mores Layer Cake. Layers of graham cracker cake filled with marshmallows, chocolate, and graham cracker crumbs, all topped with your favorite frosting and more s’mores goodies.
Ingredients
2 cups all-purpose flour
1 cup graham cracker crumbs
2 teaspoons baking powder
1/2 teaspoon salt
1 cup unsalted butter, softened
1 1/2 cups granulated sugar
4 large eggs
1 tablespoon vanilla extract
1 cup whole milk
1 cup mini marshmallows
1/2 cup chocolate chips
1/2 cup crushed graham crackers
Instructions
Preheat the oven to 350°F (175°C). Grease and flour three 9-inch round cake pans.
In a medium bowl, whisk together the flour, graham cracker crumbs, baking powder, and salt.
In a large mixing bowl, cream the butter and sugar together until light and fluffy.
Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract.
Gradually add the dry ingredients to the wet ingredients, alternating with the milk. Mix until just combined.
Divide the batter evenly among the prepared cake pans. Bake for 25-30 minutes or until a toothpick inserted into the center comes out clean.
Let the cakes cool in the pans for 10 minutes, then transfer to a wire rack to cool completely.
Place one cake layer on a serving plate. Spread half of the mini marshmallows, chocolate chips, and crushed graham crackers over the top. Repeat with the second cake layer. Top with the final cake layer.
For the frosting and decoration, you can use your favorite chocolate frosting, ganache, or marshmallow fluff. Decorate with additional mini marshmallows, chocolate chips, and graham cracker crumbs.
