- 2 cups fresh cherries, pitted and halved
- 1 cup granulated sugar
- 1 tablespoon lemon juice
- 1/4 teaspoon almond extract (optional)
- 1/2 teaspoon pectin (optional for thicker jam)
Instructions
- Prepare the cherries by washing, pitting, and halving them.
- In a medium saucepan, combine the cherries, sugar, and lemon juice.
- Cook over medium heat, stirring frequently until the sugar has dissolved and the mixture begins to bubble.
- If using, add the pectin and continue to cook, stirring often, for about 10-15 minutes or until the jam reaches your desired thickness.
- Remove from heat and stir in almond extract if desired.
- Pour the hot jam into sterilized jars and seal immediately. Allow to cool before storing in the refrigerator.
Notes
- Adjust the sugar amount based on the sweetness of the cherries.
- This jam can be stored in the refrigerator for up to 3 weeks.
- For longer storage, consider canning the jam using a water bath method.
