Instructions

  1. Prepare the cherries by washing, pitting, and halving them.

  3. Cook over medium heat, stirring frequently until the sugar has dissolved and the mixture begins to bubble.
  4. If using, add the pectin and continue to cook, stirring often, for about 10-15 minutes or until the jam reaches your desired thickness.
  5. Remove from heat and stir in almond extract if desired.
  6. Pour the hot jam into sterilized jars and seal immediately. Allow to cool before storing in the refrigerator.
