- 1 lb boneless, skinless chicken breast, sliced
- 2 tablespoons vegetable oil
- 3 cloves garlic, minced
- 1 red bell pepper, sliced
- 1 green bell pepper, sliced
- 1 yellow bell pepper, sliced
- 2 tablespoons soy sauce
- 1 tablespoon oyster sauce
- 1 tablespoon cornstarch
- 1 cup chicken broth
- 2 cups steamed rice
- Salt and pepper to taste
Instructions
- Heat the vegetable oil in a large skillet over medium-high heat.
- Add the sliced chicken breast and cook until browned, about 5-7 minutes.
- Stir in the minced garlic and cook for an additional minute until fragrant.
- Add the sliced bell peppers to the skillet and stir-fry for about 3-4 minutes until they are tender-crisp.
- In a small bowl, mix together soy sauce, oyster sauce, cornstarch, and chicken broth.
- Pour the sauce over the chicken and peppers, stirring well to coat. Cook for an additional 2-3 minutes until the sauce thickens.
- Season with salt and pepper to taste.
- Serve the stir-fry over steamed rice.
Notes
- For a spicier dish, add sliced jalapeños or red pepper flakes.
- Feel free to substitute the vegetables with your favorites.
