Ingredients
- Base Components:
- 1 ½ pounds boneless, skinless chicken thighs, cut into 1-inch pieces
- ¼ cup low-sodium soy sauce
- 2 tablespoons rice vinegar
- 1 tablespoon toasted sesame oil
- 2 tablespoons cornstarch
- 1 large red bell pepper, deseeded and cut into 1-inch pieces
- Flavor Builders:
- 1 small yellow onion, chopped
- 4 cloves fresh garlic, minced
- 1-inch piece fresh ginger, grated
- 3 tablespoons chili garlic sauce (or more, to taste)
- 2 tablespoons honey
- Seasonings:
- ½ teaspoon freshly ground black pepper
- ½ teaspoon kosher salt (or to taste)
- 1 teaspoon red pepper flakes (optional, for extra heat)
- Finishing Touches:
- 2 stalks green onions, sliced (for garnish)
- 1 tablespoon toasted sesame seeds (for garnish)
Instructions
- Marinate Chicken: Cut chicken into 1-inch pieces. In a bowl, combine chicken with soy sauce, rice vinegar, sesame oil, and cornstarch. Marinate for at least 15-20 minutes while you prep other ingredients. This tenderizes the chicken beautifully for our Spicy Dragon Chicken.
- Sauté Aromatics: Heat a tablespoon of oil in a large skillet over medium-high heat. Add chopped onion, minced garlic, and grated ginger. Sauté for 2-3 minutes until fragrant and softened, but not browned. This step builds the foundational flavor.
- Build Sauce: Stir in the red bell pepper, chili garlic sauce, honey, salt, pepper, and red pepper flakes (if using) with the aromatics. Cook for another 2-3 minutes, allowing the flavors to meld and the sauce to thicken slightly.
- Cook Chicken: Push the vegetables to one side of the skillet. Add the marinated chicken pieces to the empty side, ensuring they cook in a single layer. Sear for 4-5 minutes per side until golden brown and cooked through.
- Combine & Simmer: Once chicken is cooked, mix it thoroughly with the sauce and vegetables in the skillet. Simmer for an additional 2-3 minutes, stirring occasionally, until everything is well coated and heated through to finish the Spicy Dragon Chicken.
- Garnish & Serve: Garnish your delicious Spicy Dragon Chicken with freshly sliced green onions and a sprinkle of toasted sesame seeds. Serve immediately over steamed rice or noodles for a complete and satisfying meal that everyone will love.
