Description

Shrimp Chimichurri is a delicious and flavorful dish where succulent grilled shrimp are marinated in a vibrant parsley and garlic chimichurri sauce. Perfect for a quick and tasty meal!


Ingredients

1 lb shrimp, peeled and deveined
1 cup fresh parsley leaves
4 cloves garlic
1/4 cup red wine vinegar
1/2 cup olive oil
1 teaspoon dried oregano
1/2 teaspoon red pepper flakes
Salt and pepper to taste


Instructions

In a food processor, combine parsley, garlic, red wine vinegar, olive oil, oregano, red pepper flakes, salt, and pepper. Pulse until smooth to make the chimichurri sauce.
Marinate the shrimp in half of the chimichurri sauce for at least 30 minutes.
Preheat grill to medium-high heat.
Thread marinated shrimp onto skewers.
Grill shrimp skewers for about 2-3 minutes per side or until shrimp are cooked through.
Serve the grilled shrimp skewers with the remaining chimichurri sauce on the side.
