These Shrimp and Avocado Bowls with Mango Salsa & Lime-Chili Sauce are a perfect combination of flavors and textures. The juicy shrimp, creamy avocado, sweet mango salsa, and zesty lime-chili sauce create a delicious and satisfying meal.
Ingredients
1 lb shrimp, peeled and deveined
2 ripe avocados, diced
1 mango, diced
1/2 red onion, finely chopped
1 jalapeno, seeded and diced
1/4 cup fresh cilantro, chopped
1 lime, juiced
1/4 cup olive oil
1 teaspoon chili powder
Salt and pepper to taste
Cooked rice or quinoa for serving
Instructions
In a bowl, combine the shrimp with olive oil, chili powder, salt, and pepper. Let marinate for 15 minutes.
In a separate bowl, mix together diced avocado, mango, red onion, jalapeno, cilantro, and lime juice to make the salsa. Season with salt and pepper.
Grill the marinated shrimp for about 2-3 minutes per side until cooked through.
To make the lime-chili sauce, mix together olive oil, lime juice, chili powder, salt, and pepper.
Assemble the bowls by layering cooked rice or quinoa with the grilled shrimp, avocado-mango salsa, and drizzle with lime-chili sauce.
Garnish with additional cilantro and lime wedges before serving.
