Delicious salmon meatballs with a flavorful blend of herbs and spices, served with a creamy avocado sauce.
Ingredients
1 lb fresh salmon, skin removed, cut into chunks
1/4 cup breadcrumbs
1/4 cup grated Parmesan cheese
1/4 cup chopped fresh parsley
1/4 cup chopped red onion
1 clove garlic, minced
1 egg
1/2 teaspoon salt
1/4 teaspoon black pepper
2 tablespoons olive oil
Instructions
In a food processor, pulse the salmon until finely chopped.
In a large bowl, combine the chopped salmon, breadcrumbs, Parmesan cheese, parsley, red onion, garlic, egg, salt, and pepper. Mix until well combined.
Form the mixture into small meatballs, about 1 inch in diameter.
In a large skillet, heat the olive oil over medium heat. Add the salmon meatballs and cook for about 5-7 minutes per side, or until cooked through and golden brown.
Remove the meatballs from the skillet and set aside.
Serve the salmon meatballs with creamy avocado sauce.
