These flavorful salmon meatballs are a delicious twist on a classic dish. Served with a creamy avocado sauce, they make a perfect appetizer or main course.
Ingredients
1 lb fresh salmon, skin removed and diced
1/2 cup breadcrumbs
1/4 cup grated Parmesan cheese
1/4 cup chopped fresh parsley
1 egg, beaten
2 cloves garlic, minced
1/2 teaspoon salt
1/4 teaspoon black pepper
1 avocado, peeled and pitted
1/4 cup Greek yogurt
1 tablespoon lemon juice
1/4 teaspoon cayenne pepper
2 tablespoons olive oil
Instructions
In a food processor, pulse the salmon until finely chopped.
In a large bowl, combine the chopped salmon, breadcrumbs, Parmesan cheese, parsley, egg, garlic, salt, and pepper. Mix until well combined.
Shape the mixture into small meatballs.
In a large skillet, heat olive oil over medium heat. Add the salmon meatballs and cook until browned and cooked through, about 10-12 minutes.
In a blender, combine the avocado, Greek yogurt, lemon juice, and cayenne pepper. Blend until smooth and creamy.
Serve the salmon meatballs with the creamy avocado sauce on the side.
