Description

Ingredients

  • 2 pounds baby potatoes, halved
  • 8 ounces feta cheese, block
  • 6 cloves garlic, unpeeled
  • 3 tablespoons olive oil
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • Fresh parsley, for garnish

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a large bowl, toss the halved potatoes with olive oil, oregano, salt, and pepper.
  3. Spread the potatoes on a baking sheet and add the unpeeled garlic cloves.
  4. Place the block of feta cheese in the center of the baking sheet.
  5. Roast in the preheated oven for about 30-35 minutes, or until the potatoes are golden and crispy.
  6. Remove from the oven and allow to cool slightly before serving.
  7. Garnish with fresh parsley and serve warm.

Notes

  • For extra flavor, add lemon zest before serving.
  • Feel free to use other herbs like thyme or rosemary.
