- 2 pounds baby potatoes, halved
- 8 ounces feta cheese, block
- 6 cloves garlic, unpeeled
- 3 tablespoons olive oil
- 1 teaspoon dried oregano
- Salt and pepper to taste
- Fresh parsley, for garnish
Instructions
- Preheat the oven to 400°F (200°C).
- In a large bowl, toss the halved potatoes with olive oil, oregano, salt, and pepper.
- Spread the potatoes on a baking sheet and add the unpeeled garlic cloves.
- Place the block of feta cheese in the center of the baking sheet.
- Roast in the preheated oven for about 30-35 minutes, or until the potatoes are golden and crispy.
- Remove from the oven and allow to cool slightly before serving.
- Garnish with fresh parsley and serve warm.
Notes
- For extra flavor, add lemon zest before serving.
- Feel free to use other herbs like thyme or rosemary.
- Leftovers can be stored in an airtight container in the fridge for up to 3 days.
