- 2 heads of garlic
- 1 tablespoon olive oil
- 1 pound Italian sausage
- 1 cup white wine
- 1 pound spaghetti
- 1 cup grated Parmesan cheese
- Salt and black pepper to taste
- Fresh parsley for garnish
Instructions
- Preheat oven to 400°F (200°C) and cut off the top of the garlic heads. Drizzle with olive oil, wrap in foil and roast for 30-40 minutes, until golden and soft.
- In a large pan, cook the sausage over medium heat until browned. Remove from pan and set aside.
- Drain excess fat from the pan, leaving about 1 tablespoon. Add white wine and simmer until reduced by half.
- While wine is reducing, cook the spaghetti according to package instructions. Reserve 1 cup of pasta water before draining.
- Squeeze the roasted garlic out of the skins and mash with a fork. Add to the pan with the reduced wine, followed by the cooked sausage.
- Add cooked spaghetti to the pan, along with a bit of the pasta water. Stir until pasta is well coated with sauce. Add more pasta water if needed.
- Stir in the Parmesan cheese, and season with salt and pepper to taste. Serve with a sprinkle of fresh parsley on top.
Notes
- If you prefer a creamier sauce, you can add a splash of heavy cream at the end.
- Feel free to substitute the sausage with chicken or shrimp for a different flavor profile.
- This dish pairs well with a crisp, dry white wine.
