Roasted Asparagus & Carrots


Description

A delicious and healthy side dish featuring tender roasted asparagus and sweet carrots, lightly seasoned for maximum flavor.


Ingredients

  • 1 bunch of asparagus, trimmed
  • 2 cups of carrots, sliced
  • 2 tablespoons of olive oil
  • 1 teaspoon of garlic powder
  • 1 teaspoon of salt
  • 1/2 teaspoon of black pepper
  • 1 tablespoon of lemon juice

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. In a large bowl, combine the asparagus and carrots.
  3. Drizzle with olive oil, lemon juice, garlic powder, salt, and pepper.
  4. Toss to coat the vegetables evenly.
  5. Spread the vegetables in a single layer on a baking sheet.
  6. Roast for 20-25 minutes, or until the vegetables are tender and lightly browned.
