Delicious and tangy rhubarb oatmeal bars that are perfect for a snack or dessert.
Ingredients

- 2 cups chopped rhubarb
- 1 cup rolled oats
- 1 cup all-purpose flour
- 1/2 cup brown sugar
- 1/2 cup granulated sugar
- 1/2 cup unsalted butter, melted
- 1 teaspoon cinnamon
- 1/2 teaspoon salt
- 1/4 teaspoon baking soda
- 1/4 teaspoon baking powder
Instructions
- Preheat the oven to 350°F (175°C).
- In a mixing bowl, combine the chopped rhubarb, brown sugar, and granulated sugar. Let it sit for 10 minutes.
- In another bowl, mix the rolled oats, flour, melted butter, cinnamon, salt, baking soda, and baking powder until crumbly.
- Press half of the oat mixture into the bottom of a greased 9×9 inch baking dish.
- Spread the rhubarb mixture over the crust.
- Sprinkle the remaining oat mixture on top of the rhubarb.
- Bake for 30-35 minutes or until the top is golden brown.
- Allow to cool before cutting into bars.
Notes
- Ensure the rhubarb is fresh and chopped into small pieces for even cooking.
- Feel free to add nuts or spices for extra flavor.
- Store in an airtight container for up to a week.
