Rhubarb Oatmeal Bars: A tastyly Healthy Treat!

Ingredients

  • 2 cups chopped rhubarb
  • 1 cup rolled oats
  • 1 cup all-purpose flour
  • 1/2 cup brown sugar
  • 1/2 cup granulated sugar
  • 1/2 cup unsalted butter, melted
  • 1 teaspoon cinnamon
  • 1/2 teaspoon salt
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon baking powder

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a mixing bowl, combine the chopped rhubarb, brown sugar, and granulated sugar. Let it sit for 10 minutes.
  3. In another bowl, mix the rolled oats, flour, melted butter, cinnamon, salt, baking soda, and baking powder until crumbly.
  4. Press half of the oat mixture into the bottom of a greased 9×9 inch baking dish.
  5. Spread the rhubarb mixture over the crust.
  6. Sprinkle the remaining oat mixture on top of the rhubarb.
  7. Bake for 30-35 minutes or until the top is golden brown.
  8. Allow to cool before cutting into bars.

Notes

  • Ensure the rhubarb is fresh and chopped into small pieces for even cooking.
  • Feel free to add nuts or spices for extra flavor.
  • Store in an airtight container for up to a week.
