Description

These Rhubarb Cheesecake Squares combine the tartness of rhubarb with the creaminess of cheesecake in a delightful dessert that’s perfect for any occasion.


Ingredients

1 cup unsalted butter, softened
2 cups all-purpose flour
1/2 cup powdered sugar
2 cups chopped rhubarb
1 cup granulated sugar
1/4 cup all-purpose flour
2 large eggs
1 teaspoon vanilla extract
1/2 teaspoon salt
2 tablespoons lemon zest (from about 2 lemons)
8 oz cream cheese, softened


Instructions

Preheat the oven to 350°F (175°C).
In a mixing bowl, cream together the butter, 2 cups of flour, and powdered sugar. Press into the bottom of an ungreased 9×13 inch baking dish.
Bake the crust for 15 minutes in the preheated oven.
While the crust is baking, prepare the filling by combining the rhubarb, granulated sugar, 1/4 cup flour, eggs, vanilla extract, salt, and lemon zest in a separate bowl.
In another bowl, beat the cream cheese until smooth, then spread over the hot crust.
Pour the rhubarb mixture over the cream cheese layer.
Bake for an additional 30 minutes or until the filling is set.
Cool completely before cutting into squares.
