These Refreshing Lemon Blueberry Cheesecake Bars are a delightful blend of creamy cheesecake and vibrant blueberries, all wrapped in a buttery lemon-infused crust. Perfect for warm weather and gatherings, they are both refreshing and indulgent.
Ingredients
1 cup unsalted butter, softened
1/2 cup powdered sugar
2 tablespoons lemon zest (from about 2 lemons)
2 cups all-purpose flour
1/4 teaspoon salt
2 packages (8 oz each) cream cheese, softened
1 cup granulated sugar
2 large eggs
1/4 cup fresh lemon juice
1 teaspoon vanilla extract
1 cup fresh blueberries
1 tablespoon cornstarch
Instructions
Preheat the oven to 350°F (175°C).
In a mixing bowl, beat the softened butter and powdered sugar until light and fluffy.
Add lemon zest, flour, and salt to the butter mixture and mix until combined.
Press the mixture into the bottom of a greased 9×13 inch baking pan to form the crust.
Bake the crust in the preheated oven for 15 minutes until lightly golden.
In another bowl, beat the softened cream cheese and granulated sugar until smooth.
Add the eggs one at a time, mixing well after each addition.
Stir in the fresh lemon juice and vanilla extract until fully incorporated.
In a small bowl, toss the blueberries with cornstarch to coat them, then gently fold into the cream cheese mixture.
Pour the cream cheese filling over the baked crust and spread evenly.
Bake for an additional 30 minutes until the center is set and slightly jiggles.
Remove from the oven and allow to cool to room temperature.
Refrigerate for at least 2 hours before cutting into bars.
Serve chilled and enjoy!
