- 1 pound large strawberries
- 8 ounces cream cheese, softened
- 1/2 cup powdered sugar
- 1 teaspoon vanilla extract
- 1/4 cup heavy whipping cream
- Blueberries for garnish
- Red raspberries for garnish
Instructions
- Wash and dry the strawberries, then cut the tops off and hollow out the centers.
- In a mixing bowl, beat together the cream cheese, powdered sugar, and vanilla extract until smooth.
- In a separate bowl, whip the heavy cream until stiff peaks form.
- Gently fold the whipped cream into the cream cheese mixture.
- Using a piping bag or a spoon, fill each strawberry with the cheesecake mixture.
- Top with blueberries and raspberries for decoration.
- Chill in the refrigerator for at least 30 minutes before serving.
