Ingredients

  • 1 ½ cups graham cracker crumbs
  • ½ cup unsalted butter, melted
  • 2 cups cream cheese, softened
  • 1 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 3 large eggs
  • 1 cup sour cream
  • 1 ½ cups blueberries
  • 1 ½ cups strawberries, sliced
  • ½ cup powdered sugar
  • 1 tablespoon lemon juice

Instructions

  1. Preheat the oven to 325°F (163°C) and grease a 9×13 inch baking pan.
  2. In a bowl, mix graham cracker crumbs and melted butter until combined, then press into the bottom of the pan.
  3. In a large mixing bowl, beat together cream cheese, granulated sugar, and vanilla until smooth.
  4. Add eggs one at a time, mixing well after each addition. Then mix in sour cream until well combined.
  5. Pour the cheesecake mixture over the crust and smooth the top.
  6. Bake for 40-45 minutes, or until the center is set but slightly jiggly.
  7. Cool to room temperature, then refrigerate for at least 4 hours or overnight.
  8. Before serving, mix blueberries and strawberries with powdered sugar and lemon juice.
  9. Top the cheesecake bars with the berry mixture and cut into squares to serve.
