- 1 ½ cups graham cracker crumbs
- ½ cup unsalted butter, melted
- 2 cups cream cheese, softened
- 1 cup granulated sugar
- 1 teaspoon vanilla extract
- 3 large eggs
- 1 cup sour cream
- 1 ½ cups blueberries
- 1 ½ cups strawberries, sliced
- ½ cup powdered sugar
- 1 tablespoon lemon juice
Instructions
- Preheat the oven to 325°F (163°C) and grease a 9×13 inch baking pan.
- In a bowl, mix graham cracker crumbs and melted butter until combined, then press into the bottom of the pan.
- In a large mixing bowl, beat together cream cheese, granulated sugar, and vanilla until smooth.
- Add eggs one at a time, mixing well after each addition. Then mix in sour cream until well combined.
- Pour the cheesecake mixture over the crust and smooth the top.
- Bake for 40-45 minutes, or until the center is set but slightly jiggly.
- Cool to room temperature, then refrigerate for at least 4 hours or overnight.
- Before serving, mix blueberries and strawberries with powdered sugar and lemon juice.
- Top the cheesecake bars with the berry mixture and cut into squares to serve.
