A delightful Raspberry Cheesecake treat for all occasions!
Ingredients

- 1 1/2 cups graham cracker crumbs
- 1/3 cup sugar
- 1/2 cup butter (melted)
- 16 oz cream cheese (softened)
- 1/2 cup sugar
- 2 eggs
- 1 tsp vanilla extract
- 1 cup fresh raspberries
- 1/4 cup raspberry jam
Instructions
- First, preheat the oven to 350°F.
- Next, mix graham cracker crumbs, 1/3 cup sugar, and melted butter. Press into a pan to form the crust.
- Meanwhile, beat cream cheese, 1/2 cup sugar, eggs, and vanilla until smooth. Pour over crust.
- Then, bake for 30 minutes until set.
- While it cools, mix raspberries and jam. Spread over the cheesecake.
- Finally, chill in the fridge for at least 2 hours before slicing and serving.
Notes
- You can use a mix of berries for different flavors.
- Try adding lemon zest to the cream cheese mixture for a citrusy twist.
