- In a large bowl, combine the mashed potatoes, cheese, green onions, egg, flour, salt, and pepper.

- Heat the olive oil in a skillet over medium heat.
- Cook the potato patties for about 3-4 minutes on each side, until golden brown.
- Remove from the skillet and drain on paper towels.
- Serve warm.

- For a vegan version, replace the egg with a flaxseed egg and use vegan cheese.
