- 1 cup canned cannellini beans, rinsed and drained
 - 1 cup canned chickpeas, rinsed and drained
 - 1/2 cup sun-dried tomatoes, chopped
 - 1/4 cup red onion, finely chopped
 - 1/4 cup fresh parsley, chopped
 - 2 tablespoons olive oil
 - 1 tablespoon balsamic vinegar
 - 1 teaspoon garlic powder
 - Salt and pepper to taste
 
Instructions
- In a large bowl, combine the cannellini beans, chickpeas, sun-dried tomatoes, red onion, and parsley.
 - In a small bowl, whisk together the olive oil, balsamic vinegar, garlic powder, salt, and pepper.
 - Pour the dressing over the bean mixture and toss to combine.
 - Let the salad marinate in the refrigerator for at least 30 minutes before serving.
 - Serve chilled or at room temperature.
 
Notes
- For added flavor, consider adding feta cheese.
 - This salad can be made a day in advance.
