These puff pastry fruit tarts are a delightful combination of flaky pastry, creamy filling, and fresh fruits. They make a perfect light dessert for any occasion.
Ingredients
1 sheet puff pastry, thawed
1/4 cup cream cheese, softened
2 tablespoons powdered sugar
1/2 teaspoon vanilla extract
Assorted fresh fruits (such as berries, kiwi, and peaches)
1/4 cup apricot preserves
1 tablespoon water
Instructions
Preheat the oven to 400°F (200°C).
Cut the puff pastry sheet into 4 equal squares and place them on a baking sheet lined with parchment paper.
Using a knife, score a 1/2 inch border around each pastry square. Be careful not to cut all the way through.
In a small bowl, mix the cream cheese, powdered sugar, and vanilla extract until smooth.
Spread the cream cheese mixture inside the borders of each pastry square.
Arrange the sliced fruits on top of the cream cheese mixture.
Bake the tarts in the preheated oven for 15-20 minutes or until the pastry is golden brown.
In a small saucepan, heat the apricot preserves and water until melted and smooth.
Brush the warm preserves over the fruits on the tarts.
Allow the tarts to cool slightly before serving. Enjoy!
