Ingredients

- 1 cup oats
- 1 banana
- 2 eggs
- 1/2 cup milk (or dairy-free alternative)
- 1 tsp baking powder
- 1/2 tsp vanilla extract
- Pinch of salt
- Cooking oil or butter for the pan
Instructions
- Blend the oats until they reach a fine flour consistency.
- Add the banana, eggs, milk, baking powder, vanilla extract, and salt to the blender and blend until smooth.
- Heat a non-stick skillet over medium heat and add a little oil or butter.
- Pour 1/4 cup of the batter onto the skillet for each pancake.
- Cook until bubbles form on the surface, then flip and cook for an additional 1-2 minutes until golden brown.
- Repeat with the remaining batter.
- Serve warm with your favorite toppings, such as fresh fruit, yogurt, or maple syrup.
Notes
- For added flavor, consider mixing in cinnamon or nutmeg.
- These pancakes can be stored in the fridge for up to 3 days or frozen for later use.
- Adjust the thickness of the batter by adding more or less milk to your preference.
