Description

A delightful Pineapple Mexican Pie that’s easy to make and bursting with tropical flavors


Ingredients

  • 1 can (20 oz) crushed pineapple
  • 1 cup cornmeal
  • 1 cup sugar
  • 1/2 cup butter, melted
  • 2 eggs
  • 1/2 cup milk
  • 1/2 tsp salt

Instructions

  1. Preheat oven to 350°F.
  2. Drain pineapple, reserve juice.
  3. In a bowl, mix cornmeal, sugar, butter, eggs, milk, salt, and 1 cup of the drained pineapple.
  4. Pour into a greased pie dish.
  5. Bake for 30 minutes or until set.
  6. Meanwhile, in a saucepan, simmer reserved pineapple juice until thickened.
  7. Once the pie is done, pour thickened juice over the top.
  8. Allow to cool before serving.

Notes

  • Add shredded coconut for extra texture.
  • Serve with a dollop of whipped cream on top.
  • For a twist, sprinkle cinnamon on the pie before baking.
