A delightful Pineapple Mexican Pie that’s easy to make and bursting with tropical flavors

- 1 can (20 oz) crushed pineapple
- 1 cup cornmeal
- 1 cup sugar
- 1/2 cup butter, melted
- 2 eggs
- 1/2 cup milk
- 1/2 tsp salt
Instructions
- Preheat oven to 350°F.
- Drain pineapple, reserve juice.
- In a bowl, mix cornmeal, sugar, butter, eggs, milk, salt, and 1 cup of the drained pineapple.
- Pour into a greased pie dish.
- Bake for 30 minutes or until set.
- Meanwhile, in a saucepan, simmer reserved pineapple juice until thickened.
- Once the pie is done, pour thickened juice over the top.
- Allow to cool before serving.
Notes
- Add shredded coconut for extra texture.
- Serve with a dollop of whipped cream on top.
- For a twist, sprinkle cinnamon on the pie before baking.
