Instructions

  1. Cut the chicken into bite-sized pieces and season with salt and pepper.

  3. Add the diced red bell pepper to the skillet and continue cooking for another 2-3 minutes.
  4. In a small bowl, mix together the soy sauce, brown sugar, and cornstarch to create a sauce.
  5. Add the sauce and pineapple chunks to the skillet. Stir well, ensuring the chicken is coated in the sauce.
  6. Cover the skillet and simmer for about 5 minutes, or until the chicken is cooked through and the sauce has thickened.
  7. Serve the pineapple chicken over the cooked rice.
