Instructions
- Prep Potatoes: Preheat grill to medium-high heat. Toss halved potatoes with olive oil, minced garlic, salt, pepper, and rosemary until evenly coated. Use a grill basket for easy handling.
- Start Grilling: Place potato basket on grill and cook for 15 minutes, shaking every 5 minutes. They should start getting golden and tender when pierced with a fork.
- Season Chicken: While potatoes cook, brush chicken with olive oil and season with garlic powder, smoked paprika, salt, and pepper. Let it rest at room temperature briefly.
- Make Glaze: Mix honey and BBQ sauce in a small bowl. This sweet and tangy glaze will caramelize beautifully on the grill, creating that perfect sticky coating.
- Grill Chicken: Add seasoned chicken to grill alongside potatoes. Cook 6-7 minutes per side, brushing with honey BBQ glaze during the last 2 minutes of cooking.
- Add Cheese: Sprinkle Parmesan cheese over potatoes in the final 2 minutes of cooking. The cheese should melt and get slightly golden for the perfect finish.
