  • 1 cup granulated sugar
  • 1 cup packed brown sugar
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 2 teaspoons peppermint extract
  • 3 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 2 cups chocolate chunks
  • 1/2 cup crushed peppermint candies

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large mixing bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
  3. Add the eggs, vanilla extract, and peppermint extract, and mix until well combined.
  4. In a separate bowl, whisk together the flour, baking soda, and salt.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  6. Fold in the chocolate chunks and crushed peppermint candies.
  7. Drop rounded tablespoons of dough onto ungreased baking sheets, spacing them about 2 inches apart.
  8. Bake for 10-12 minutes or until the edges are lightly golden.
  9. Allow cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.

Notes

  • For a stronger peppermint flavor, you can increase the amount of peppermint extract.
  • Store cookies in an airtight container to keep them fresh.
  • These cookies freeze well; just make sure to separate layers with parchment paper.
