- 1/2 cup creamy peanut butter
- 1/2 cup brown sugar, packed
- 1/4 cup granulated sugar
- 1 tsp vanilla extract
- 1 large egg
- 1 cup mini marshmallows
- 1/2 cup chocolate chips
Instructions
- Preheat your oven to 350°F (175°C).
- In a bowl, whisk together the flour, baking soda, and salt.
- In another bowl, cream together the butter, peanut butter, brown sugar, granulated sugar, and vanilla until smooth.
- Add the egg and mix until fully incorporated.
- Gradually add the dry ingredients to the wet mixture, stirring until combined.
- Fold in the mini marshmallows and chocolate chips.
- Drop tablespoon-sized balls of dough onto a baking sheet lined with parchment paper.
- Bake for 10-12 minutes or until edges are lightly golden.
- Allow cookies to cool completely before spreading peanut butter and marshmallow fluff between two cookies to create sandwiches.
Notes
- For a richer flavor, use dark chocolate chips.
- Store in an airtight container at room temperature for up to a week.
