Peanut Butter S’mores Sandwich Cookies

Ingredients

  • 1 cup all-purpose flour
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1/2 cup unsalted butter, softened
  • 1/2 cup creamy peanut butter
  • 1/2 cup brown sugar, packed
  • 1/4 cup granulated sugar
  • 1 tsp vanilla extract
  • 1 large egg
  • 1 cup mini marshmallows
  • 1/2 cup chocolate chips

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, whisk together the flour, baking soda, and salt.
  3. In another bowl, cream together the butter, peanut butter, brown sugar, granulated sugar, and vanilla until smooth.
  4. Add the egg and mix until fully incorporated.
  5. Gradually add the dry ingredients to the wet mixture, stirring until combined.
  6. Fold in the mini marshmallows and chocolate chips.
  7. Drop tablespoon-sized balls of dough onto a baking sheet lined with parchment paper.
  8. Bake for 10-12 minutes or until edges are lightly golden.
  9. Allow cookies to cool completely before spreading peanut butter and marshmallow fluff between two cookies to create sandwiches.

Notes

  • For a richer flavor, use dark chocolate chips.
  • Store in an airtight container at room temperature for up to a week.
  • Experiment with different nut butters for variation.
