Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a large bowl, whisk together the flour, sugar, baking powder, and salt.
  3. Add the cold cubed butter and mix until the mixture resembles coarse crumbs.
  4. Stir in the heavy cream and vanilla extract until just combined.
  5. Gently fold in the diced peaches.
  6. Turn the dough onto a floured surface and knead gently until it comes together.
  7. Pat the dough into a circle about 1-inch thick and cut into wedges.
  8. Place the scones on a baking sheet lined with parchment paper.
  9. Brush the tops with beaten egg.
