- 4 boneless, skinless chicken breasts
- 1 cup grated Parmesan cheese
- 1 cup breadcrumbs
- 2 eggs
- 2 tablespoons olive oil
- 4 cloves garlic, minced
- 1 cup heavy cream
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
Instructions
- Preheat your oven to 400°F (200°C).
- In a shallow dish, mix together the Parmesan cheese and breadcrumbs.
- Beat the eggs in another shallow dish.
- Season the chicken breasts with salt and pepper.
- Dip each chicken breast into the egg, then coat with the Parmesan and breadcrumb mixture.
- Heat olive oil in a skillet over medium heat and sear the chicken breasts for 3-4 minutes on each side until golden brown.
- Transfer the chicken to a baking dish and bake for 20 minutes or until fully cooked.
- In the same skillet, add minced garlic and sauté for 1 minute.
- Pour in the heavy cream and simmer for 5 minutes, stirring occasionally until the sauce thickens.
- Serve the chicken topped with the creamy garlic sauce and garnish with fresh parsley.
Notes
- For a lighter version, use Greek yogurt instead of heavy cream.
- Ensure the chicken is cooked to an internal temperature of 165°F (75°C).
