Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 cup grated Parmesan cheese
  • 1 cup breadcrumbs
  • 2 eggs
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 cup heavy cream
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a shallow dish, mix together the Parmesan cheese and breadcrumbs.
  3. Beat the eggs in another shallow dish.
  4. Season the chicken breasts with salt and pepper.
  5. Dip each chicken breast into the egg, then coat with the Parmesan and breadcrumb mixture.
  6. Heat olive oil in a skillet over medium heat and sear the chicken breasts for 3-4 minutes on each side until golden brown.
  7. Transfer the chicken to a baking dish and bake for 20 minutes or until fully cooked.
  8. In the same skillet, add minced garlic and sauté for 1 minute.
  9. Pour in the heavy cream and simmer for 5 minutes, stirring occasionally until the sauce thickens.
  10. Serve the chicken topped with the creamy garlic sauce and garnish with fresh parsley.
