Ingredients
4 salmon fillets
2 tablespoons olive oil
2 cloves garlic, minced
5 cups fresh spinach
1/2 cup heavy cream
1/4 cup grated Parmesan cheese
Salt and pepper to taste
1 lemon, sliced for garnish
Instructions
Preheat a large skillet over medium-high heat.
Season the salmon fillets with salt and pepper.
Add olive oil to the skillet and sear the salmon fillets for about 4-5 minutes on each side or until cooked to your desired level of doneness. Remove from skillet and set aside.
In the same skillet, add minced garlic and cook for about 1 minute until fragrant.
Add fresh spinach to the skillet and cook until wilted.
Stir in heavy cream and Parmesan cheese, and let the sauce simmer for about 2-3 minutes until slightly thickened.
Return the salmon fillets to the skillet and spoon the sauce over them. Let it cook for an additional 2-3 minutes until everything is heated through.
Garnish with lemon slices before serving.
