- 1 cup rice
- 2 cups vegetable broth
- 1 tablespoon olive oil
- 1 onion, diced
- 2 cloves garlic, minced
- 1 teaspoon dried dill
- 1 teaspoon lemon juice

- Fresh parsley for garnish
Instructions
- Heat olive oil in a large pot over medium heat.
- Add diced onion and minced garlic, sauté until translucent.
- Add rice and stir for a minute to toast.
- Pour in vegetable broth and bring to a boil.
- Reduce heat to low, cover, and simmer for 15 minutes.
- Place salmon fillets on top of rice, drizzle with lemon juice, and season with dill, salt, and pepper.
- Cover and cook for another 10-12 minutes until salmon is cooked through.
- Garnish with fresh parsley before serving.
