This One-Pot Creamy Vegetable Soup is a hearty and comforting vegan dish that is packed with nutritious vegetables and creamy coconut milk. Perfect for a cozy night in or a quick weeknight meal.


Ingredients

1 tbsp olive oil
1 onion, chopped
2 cloves garlic, minced
2 carrots, chopped
2 celery stalks, chopped
1 bell pepper, chopped
2 potatoes, diced
4 cups vegetable broth
1 can (14 oz) diced tomatoes
1 cup coconut milk
1 tsp salt
1/2 tsp black pepper
1 tsp dried thyme
1 tsp dried oregano
1/2 tsp paprika
1/4 cup nutritional yeast
2 cups baby spinach


Instructions

In a large pot, heat olive oil over medium heat.
Add onion and garlic, sauté until fragrant.
Add carrots, celery, bell pepper, and potatoes. Cook for 5 minutes.
Pour in vegetable broth and diced tomatoes. Bring to a boil.
Reduce heat, cover, and simmer for 15-20 minutes until vegetables are tender.
Stir in coconut milk, salt, pepper, thyme, oregano, paprika, and nutritional yeast.
Add baby spinach, cook until wilted.
Taste and adjust seasoning if needed.
Serve hot and enjoy!
