- 1 lb smoked sausage, sliced
- 1 medium onion, diced
- 3 cloves garlic, minced
- 1 bell pepper, diced
- 2 cups chicken broth
- 1 cup heavy cream
- 1 cup grated Parmesan cheese
- 2 tablespoons Cajun seasoning
- Salt and pepper to taste
- 2 tablespoons olive oil
- Fresh parsley for garnish
Instructions
- In a large pot, heat olive oil over medium heat.
- Add the sliced sausage and cook until browned, about 5 minutes.
- Add the diced onion, bell pepper, and minced garlic; sauté until softened, about 3-4 minutes.
- Stir in the Cajun seasoning, salt, and pepper.
- Add the penne pasta and chicken broth; bring to a boil.
- Reduce heat and simmer for 10-12 minutes, or until pasta is cooked al dente.
- Stir in the heavy cream and Parmesan cheese; cook for an additional 2-3 minutes until creamy.
- Garnish with fresh parsley before serving.
Notes
- For a spicier version, add more Cajun seasoning or a pinch of cayenne pepper.
