Ingredients

  • 4 chicken thighs
  • 1 cup long-grain rice
  • 1 cup chicken broth
  • 1/2 cup honey BBQ sauce
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • 1 cup mixed vegetables (optional)

Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Season chicken thighs with garlic powder, onion powder, salt, and pepper.
  3. Brown the chicken thighs in the skillet for 5-7 minutes on each side.
  4. Remove chicken from the skillet and set aside.
  5. Add rice to the skillet and stir for 1-2 minutes.
  6. Pour in chicken broth and honey BBQ sauce, stirring well.
  7. Place the chicken back into the skillet on top of the rice.
  8. Cover and simmer for 20-25 minutes until the rice is cooked and chicken is done.
  9. Add mixed vegetables in the last 5 minutes of cooking, if using.

Notes

  • Can substitute chicken thighs with breasts if preferred.
  • For extra flavor, marinate the chicken in BBQ sauce for a few hours before cooking.
