A delicious and easy one-pan meal combining honey BBQ chicken and rice, perfect for a quick weeknight dinner.

- 4 chicken thighs
- 1 cup long-grain rice
- 1 cup chicken broth
- 1/2 cup honey BBQ sauce
- 1 tablespoon olive oil
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- Salt and pepper to taste
- 1 cup mixed vegetables (optional)
Instructions
- Heat olive oil in a large skillet over medium heat.
- Season chicken thighs with garlic powder, onion powder, salt, and pepper.
- Brown the chicken thighs in the skillet for 5-7 minutes on each side.
- Remove chicken from the skillet and set aside.
- Add rice to the skillet and stir for 1-2 minutes.
- Pour in chicken broth and honey BBQ sauce, stirring well.
- Place the chicken back into the skillet on top of the rice.
- Cover and simmer for 20-25 minutes until the rice is cooked and chicken is done.
- Add mixed vegetables in the last 5 minutes of cooking, if using.
Notes
- Can substitute chicken thighs with breasts if preferred.
- For extra flavor, marinate the chicken in BBQ sauce for a few hours before cooking.
- Adjust the amount of sauce to taste.
