Ingredients
1 lb boneless, skinless chicken breasts, cut into bite-sized pieces
2 medium sweet potatoes, peeled and diced
1 red bell pepper, sliced
1 red onion, sliced
2 cloves garlic, minced
2 tablespoons olive oil
1 teaspoon paprika
1 teaspoon dried oregano
1/2 teaspoon salt
1/4 teaspoon black pepper
Fresh parsley, chopped (for garnish)
Instructions
In a large skillet, heat olive oil over medium-high heat.
Add chicken pieces and cook until browned on all sides, about 5-7 minutes.
Add sweet potatoes, bell pepper, onion, and garlic to the skillet. Stir in paprika, oregano, salt, and black pepper.
Cover and cook for 15-20 minutes, stirring occasionally, until chicken is cooked through and sweet potatoes are tender.
Garnish with chopped parsley before serving.
