Ingredients

  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup sugar
  • 1/2 cup unsalted butter, melted
  • 16 oz cream cheese, softened
  • 1 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 cup heavy whipping cream
  • 2 cups fresh peaches, diced
  • 1 cup fresh raspberries
  • 1/4 cup peach preserves

Instructions

  1. In a bowl, combine graham cracker crumbs, sugar, and melted butter. Mix well and press into the bottom of a 9-inch springform pan to form the crust.
  2. In another bowl, beat the softened cream cheese, powdered sugar, and vanilla extract until smooth and creamy.
  3. In a separate bowl, whip the heavy cream until stiff peaks form, then gently fold it into the cream cheese mixture.
  4. Layer half of the cream cheese mixture over the crust, followed by half of the diced peaches and raspberries. Repeat the layers.
  5. Spread peach preserves over the top layer and refrigerate for at least 4 hours or until set.
  6. Slice and serve chilled, garnished with additional fruit if desired.
