- 1 1/2 cups graham cracker crumbs
- 1/4 cup sugar
- 1/2 cup unsalted butter, melted
- 16 oz cream cheese, softened
- 1 cup powdered sugar
- 1 teaspoon vanilla extract
- 1 cup heavy whipping cream
- 2 cups fresh peaches, diced
- 1 cup fresh raspberries
- 1/4 cup peach preserves
Instructions
- In a bowl, combine graham cracker crumbs, sugar, and melted butter. Mix well and press into the bottom of a 9-inch springform pan to form the crust.
- In another bowl, beat the softened cream cheese, powdered sugar, and vanilla extract until smooth and creamy.
- In a separate bowl, whip the heavy cream until stiff peaks form, then gently fold it into the cream cheese mixture.
- Layer half of the cream cheese mixture over the crust, followed by half of the diced peaches and raspberries. Repeat the layers.
- Spread peach preserves over the top layer and refrigerate for at least 4 hours or until set.
- Slice and serve chilled, garnished with additional fruit if desired.
Notes
- Make sure the cream cheese is at room temperature for easy mixing.
- Feel free to substitute other fruits based on availability and preference.
