A light and refreshing no-bake cheesecake with a delightful orange and pineapple swirl.

- 1 ½ cups graham cracker crumbs
- ½ cup unsalted butter, melted
- 2 cups cream cheese, softened
- 1 cup powdered sugar
- 1 teaspoon vanilla extract
- 1 cup heavy whipping cream
- 1 cup crushed pineapple, drained
- 1 cup orange juice
- 2 tablespoons gelatin (optional)
Instructions
- In a bowl, mix graham cracker crumbs and melted butter until combined.
- Press the mixture into the bottom of a springform pan to form the crust.
- In a separate bowl, beat cream cheese, powdered sugar, and vanilla extract until smooth.
- In another bowl, whip heavy cream until stiff peaks form.
- Fold the whipped cream into the cream cheese mixture gently until well blended.
- Divide the mixture into two bowls. In one bowl, add the crushed pineapple and mix well.
- In the other bowl, add the orange juice and mix until combined.
- Pour the pineapple mixture over the crust, then add the orange mixture on top.
- Swirl the two mixtures with a knife for a marbled effect.
- Chill in the refrigerator for at least 4 hours or until set.
- Serve chilled and enjoy!
Notes
- For a firmer texture, consider adding gelatin to the orange juice before mixing.
- Garnish with fresh orange slices or pineapple chunks if desired.
