Mozzarella-Stuffed Turkey Meatballs with Spinach and Garlic

Description

These flavorful turkey meatballs are stuffed with gooey mozzarella cheese and served with sautéed spinach and garlic for a delicious and satisfying meal.


Ingredients

1 lb ground turkey
1/2 cup breadcrumbs
1/4 cup grated Parmesan cheese
1/4 cup chopped fresh parsley
1/2 teaspoon salt
1/4 teaspoon black pepper
1/2 teaspoon garlic powder
1/4 teaspoon onion powder
1 egg
4 oz mozzarella cheese, cut into small cubes
1 tablespoon olive oil
2 cups fresh spinach
2 cloves garlic, minced


Instructions

In a large mixing bowl, combine ground turkey, breadcrumbs, Parmesan cheese, parsley, salt, pepper, garlic powder, onion powder, and egg. Mix until well combined.
Take a small amount of the turkey mixture and flatten it in your palm. Place a cube of mozzarella in the center and form the turkey mixture around it to create a meatball. Repeat for the remaining mixture.
In a large skillet, heat olive oil over medium heat. Add the meatballs and cook until browned on all sides, about 8-10 minutes.
Remove the meatballs from the skillet and set aside. In the same skillet, add the garlic and spinach. Cook until the spinach is wilted.
Return the meatballs to the skillet and cover with a lid. Cook for an additional 5-7 minutes until the meatballs are cooked through and the cheese is melted.
Serve the meatballs with spinach and garlic on a platter and enjoy!
