Ingredients

  • 1 lb fresh salmon, skin removed and chopped
  • 1/2 cup breadcrumbs
  • 1/4 cup fresh parsley, chopped
  • 2 cloves garlic, minced
  • 1 egg, beaten
  • 1 tsp lemon juice
  • 1/2 tsp salt
  • 1/4 tsp black pepper

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a bowl, combine the chopped salmon, breadcrumbs, parsley, garlic, beaten egg, lemon juice, salt, and pepper.
  3. Mix until well combined and form into small balls.
  4. Place the salmon balls on a baking sheet lined with parchment paper.
  5. Bake for 15-20 minutes or until golden brown and cooked through.
  6. While the salmon balls are baking, prepare the creamy avocado sauce by blending ripe avocados, Greek yogurt, lime juice, and salt until smooth.
  7. Serve the salmon balls warm with the creamy avocado sauce on the side.

Notes

  • For a spicier kick, add red pepper flakes to the salmon mixture.
  • These salmon balls can be frozen before baking and cooked from frozen; just add a few extra minutes to the cooking time.
