- 1 lb fresh salmon, skin removed and chopped
- 1/2 cup breadcrumbs
- 1/4 cup fresh parsley, chopped
- 2 cloves garlic, minced
- 1 egg, beaten
- 1 tsp lemon juice
- 1/2 tsp salt
- 1/4 tsp black pepper
Instructions
- Preheat the oven to 375°F (190°C).
- In a bowl, combine the chopped salmon, breadcrumbs, parsley, garlic, beaten egg, lemon juice, salt, and pepper.
- Mix until well combined and form into small balls.
- Place the salmon balls on a baking sheet lined with parchment paper.
- Bake for 15-20 minutes or until golden brown and cooked through.
- While the salmon balls are baking, prepare the creamy avocado sauce by blending ripe avocados, Greek yogurt, lime juice, and salt until smooth.
- Serve the salmon balls warm with the creamy avocado sauce on the side.
Notes
- For a spicier kick, add red pepper flakes to the salmon mixture.
- These salmon balls can be frozen before baking and cooked from frozen; just add a few extra minutes to the cooking time.
