These mouthwatering salmon balls are crispy on the outside and tender on the inside, served with a creamy avocado sauce that perfectly complements the flavors.
Ingredients
1 pound fresh salmon, skinless and boneless
1/2 cup breadcrumbs
1/4 cup green onions, finely chopped
1/4 cup fresh parsley, chopped
2 tablespoons Dijon mustard
1 tablespoon lemon juice
1 teaspoon garlic powder
1 teaspoon onion powder
1/2 teaspoon salt
1/4 teaspoon black pepper
1 egg, beaten
2 tablespoons olive oil (for frying)
Instructions
Preheat the oven to 400°F (200°C).
In a large mixing bowl, flake the salmon into small pieces.
Add breadcrumbs, green onions, parsley, Dijon mustard, lemon juice, garlic powder, onion powder, salt, black pepper, and the beaten egg to the bowl.
Mix all ingredients together until well combined.
Form the mixture into small balls, about the size of a golf ball.
Heat olive oil in a skillet over medium heat.
Add the salmon balls to the skillet and fry for 3-4 minutes on each side until golden brown.
Transfer the salmon balls to a baking sheet and bake in the preheated oven for 10-15 minutes, or until cooked through.
Meanwhile, prepare the creamy avocado sauce by blending 1 ripe avocado, 1/4 cup Greek yogurt, 1 tablespoon lime juice, and salt to taste in a food processor until smooth.
Serve the salmon balls hot with the creamy avocado sauce on the side.
