Instructions
- Preheat the oven to 350°F (175°C) and line a cupcake tray with liners.
- In a large bowl, whisk together the flour, sugar, cocoa powder, baking soda, baking powder, and salt.
- Add the vegetable oil, eggs, vanilla extract, milk, and peppermint extract to the dry ingredients and mix until well combined.
- Fill the cupcake liners about 2/3 full with the batter.
- Bake for 18-20 minutes or until a toothpick inserted in the center comes out clean.
- Allow the cupcakes to cool completely before frosting.
- For the frosting, beat together butter, powdered sugar, peppermint extract, and milk until smooth and creamy.
- Frost the cooled cupcakes and garnish with chocolate shavings and mint leaves if desired.
