Fun twist on classic dessert in individual portions
Ingredients

- 1 can (8 oz) pineapple rings
- 1/4 cup unsalted butter, melted
- 1/2 cup brown sugar
- 8 oz cream cheese, softened
- 1/2 cup granulated sugar
- 1 tsp vanilla extract
- 1 egg
- 1 cup graham cracker crumbs
- 1/4 cup melted butter
Instructions
- Preheat oven to 350°F. Grease muffin tin.
- Place pineapple rings in tin. Mix melted butter and brown sugar, spoon over pineapples.
- Beat cream cheese, granulated sugar, vanilla, and egg until smooth. Spoon over pineapples.
- Combine graham cracker crumbs and melted butter. Sprinkle over each cheesecake.
- Bake for 25-30 mins. Let cool, then chill in the fridge.
Notes
- If using fresh pineapple, grill or sauté with sugar until caramelized.
- Add a cherry on top for a pop of color and flavor.
