Fun twist on classic dessert in individual portions


Ingredients

  • 1 can (8 oz) pineapple rings
  • 1/4 cup unsalted butter, melted
  • 1/2 cup brown sugar
  • 8 oz cream cheese, softened
  • 1/2 cup granulated sugar
  • 1 tsp vanilla extract
  • 1 egg
  • 1 cup graham cracker crumbs
  • 1/4 cup melted butter

Instructions

  1. Preheat oven to 350°F. Grease muffin tin.
  2. Place pineapple rings in tin. Mix melted butter and brown sugar, spoon over pineapples.
  3. Beat cream cheese, granulated sugar, vanilla, and egg until smooth. Spoon over pineapples.
  4. Combine graham cracker crumbs and melted butter. Sprinkle over each cheesecake.
  5. Bake for 25-30 mins. Let cool, then chill in the fridge.

Notes

  • If using fresh pineapple, grill or sauté with sugar until caramelized.
  • Add a cherry on top for a pop of color and flavor.
