Ingredients

  • 1 cup all-purpose flour
  • 1/2 cup sugar
  • 1/4 cup unsalted butter, softened
  • 2 large eggs
  • 1/2 cup milk
  • 1 tsp vanilla extract
  • 1/2 tsp baking powder
  • 1/4 tsp salt
  • 1/2 cup chocolate chips (optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, cream together the butter and sugar until light and fluffy.
  3. Add the eggs one at a time, mixing well after each addition.
  4. Stir in the milk and vanilla extract.
  5. In another bowl, whisk together the flour, baking powder, and salt.
  6. Gradually add the dry ingredients to the wet mixture, stirring until just combined.
  7. If desired, fold in the chocolate chips.
  8. Pour the batter into greased mini loaf pans, filling each about 2/3 full.
  9. Bake for 20-25 minutes, or until a toothpick inserted into the center comes out clean.
  10. Allow to cool in the pans for 10 minutes before transferring to a wire rack to cool completely.

Notes

  • These mini loaves can be frozen for up to 3 months.
  • Feel free to add nuts or dried fruits for variation.
  • For a healthier option, substitute half of the all-purpose flour with whole wheat flour.
